New legislation (Jan 2006) places greater accountability on anyone in the food business with supervisory responsibility. This course is for Managers and supervisors in small, medium or large catering, manufacturing or retail businesses. Particularly relevant for those who have to develop or monitor HACCP based food safety management procedures and systems.

How is the course assessed?

There is a 60 question multiple-choice assessment paper at the end of the course. All successful candidates gain a Level 3 Award in Supervising Food Safety from the Chartered Institute of Environmental Health. Delegates have 2 hours in which to complete the exam.

The CIEH require that all people taking the exam need to provide the original photo ID. (e.g. passport, driving licence, work pass).

How long does the course last?

You have more of a choice if your staff have qualified before

If your staff do not have an in date CIEH Leve3 certificate they need to sit the 3 day course.

It is recommended that supervisory staff and above complete refresher training every 3 years. For the refresher course delegates need to complete their activity based workbook. This is followed by a 2 hour delegate/tutor discussion session and a 2 hour exam.

How long is the certificate valid for?

There is no set time in law for how long a certificate lasts. However, generally accepted  good practice within the industry is that certificates should be renewed every three years.
